Well, we are officially in the dog days of summer down here in the south. Good golly, it’s HOT (and humid). If you follow me on Instagram, you know I have been loving the cold foods lately. So, a few weeks ago, we were having a cookout with family and my job was a side dish. I didn’t want to go to the store so I just whipped up this Corn, Cucumber, and Avocado Salad with ingredients I already had on hand. And let me tell you , it did not disappoint.
